Curried Chickpea wraps



When the weather hits 30+ and I have a busy day ahead this is my go-to quick and easy lunch.

Prep time: 15 minutes

Yields 6 salads


INGREDIENTS


o 2 Tablespoons of Mayo

o 1 Tablespoon lemon Juice

o 1 Tablespoon of Curry Powder

o ¼ Tsp of Cayenne (Optional depending on how much heat you want)

o 1 14 oz Cans of chickpeas

o 6 Leaves of lettuce

o ¼ Cup Finely Diced Red Onion

o 1/8 Cup chopped Cilantro



INSTRUCTIONS:


  1. Mix the first 4 ingredients then add the chickpeas and mash with a fork or potato masher until mostly mashed

  2. 2. Stir in remaining ingredients, add salt/pepper to taste and add to your wrap!
