Tarragon is one of the key components used in French cooking and is known for its licorice-like flavors. It is used to season fish and poultry but is now starting to show up a lot in Russian cuisine because of Georgian cuisine. In Georgia and the Caucasus Tarragon is one of the main ingredients used. In Georgia, they even make lemonade from Tarragon! This is definitely one of our favorite herbs to use!
