These raw cacoa beans comes from the Cooperativa Agraria Norandino located in the Piura and Ayabaca provinces of Peru. Piura cacao beans are native Criollos with 30% white beans and have a complex flavor profile consiting of nutty, sugar cane with an overall malty profile. Unlike most cacao beans, this variety grows in a dessert as opposed to a humid jungle which means these beans have lower levels of tannins as the plant does not need as much protection from predators.
