Mulato Chile

Mulato is a variety of dried poblano chile. The mulato chile is mildly spicy and sweet. Mulato Chilies have notes of chocolate and dried fruit flavors. A key ingredient in mole poblano. The best grades of mulato chiles are left to ripen and dry on the plant. The mulato chile is a key ingredient fro Mexican dishes and is rarely stuffed but rather used whole in moles before blended. Although Mulato Chilies are not often ground they are especially delicious in the powdered form.
