As seen on the Netflix special "Chef's Table" from mechelin star restaurant Pujol. Chicatana Ants are a rare and coveted Mexican delicacy. Not only do they fly, but they also bite! These edible insects are collected in select parts of Oaxaca only once or twice a year during the first major rains of the season which is a two week narrow window of time. Ours are sourced from Oaxaca and are dry toasted on a comal. Enjoyed in a salsa chicatana or accompanied by mezcal, Chicatanas are a salty, smoky and one of the rarest ingredients on the planet!
