Belize Caribbean BBQ
On the island of Caye Caulker in Belize I discovered one of the most delicous BBQ spices! Also known as "Red Recato" this mixture is a Belizean favourite. It's citrucy, sweet and savory all at once creating a perfect balance for marinades, BBQ sauces, topping salads or seasoning all kinds of seafood dishes.
Our favourite dish is Belizean Chicken. Simply take this spice and mix with a bit of apple cider vineger and oil to make a paste for marinading the chicken. Then grill it on the beach... or wherever you are!
Ingredients: Annato, Coriander, Cumin, Cloves, Allspice, Black Pepper, Oregano, Garlic, Chili, Salt
