Asafoetida

The French often mocked Asafoetida calling it the “Devils Turd” due to the sulphuric stink it emits, but those who dare to cook it with oil are rewarded with a special spice. When cooked the unpleasant smell turns into a pleasant roasted garlic flavour which also doubles as a digestive aid. Asafoetida is a very important ingredient to Indian cuisine and is often used in lentil dishes along with curries or fish.
