Although Iceland is not known for its spices, its cuisine is a testament to the harsh environment Iceland is. Icelandic cuisine harnesses many herbs that are only found in Nordic dishes like Juniper Berries, Dill, Seaweed and Tarragon. To spice it up a bit we have added Cubeb Berries to give it a pine-like aroma, which is common in the land of fire and ice.
This spice is great on cured meats, rubs on roasts or cooked slowly in a hearty meat stew. This is Icelandic comfort food and common throughout the entire Nordic world. This is one of my more unusual; spices and that’s a good thing, try something the Vikings would have had!
Ingredients: Caraway, Thyme, Dill, Cubeb, Juniper Berry, Tarragon, Nori Seaweed, Lemon Peel, Himalayan Salt
