These red little jewels are a key component to Persian Cuisine often labelled under their Persian name zereshk. Barberries are great to have on hand to add to rice dishes, soups, stews and couscous to add its sour tangy flavour that is very high in vitamin C. In Afghanistan and Iran you will not find rice without these little berries added to it often alongside Saffron and Cinnamon.
