Ancho is large and purple in color and has a fruity flavor. Anchos are dried Poblano Chilies and are not spicy at all. They are commonly asked for in many Mexican recipes especially Moles, a rich and complex Mexican stew. The Ancho chili is sweet and grape-like flavored and among one of the most popular chilies in Mexico.
