High up in a remote valley of the Himalayas Nepal is the Tibetan Buddhist temple of Kopan. Here the Buddhist Monks hand grind Nepalese Spices to create a mixture perfect for their vegetarian diets. After visiting Kopan monastery I learned from the monks about this mixture.
Similar to Garam Masala it can be used in the same way. It’s a woodsy earthy blend perfect for Dals (Indian Lentil Curry) and Nepalese style curries. For us, it’s a great blend to switch up anywhere that calls for Garam Masala to change things up.
