Cacao Flowers are used throughout Oaxaca and Chiapas in Mexican style deserts, stews and a special drink called Tajete. The Zapotec people from the Valles Centrales are well known for using Cacao Flowers to make Tajete. Tejate is made with toasted corn, fermented cacao beans and cacao flowers, which are ground into a paste that’s mixed with water and stirred by hand into a smooth mixture.
