Our Anise Hyssop is harvested when the flowers are finishing their full bloom for the strongest flavour. It has a mix of Anise and Mint flavour. Brew in teas, infusions, cocktail syrup, vinaigrettes, jellies or BBQ sauces. The flavour pairs easily with fresh fruits such as mellon or strawberries as well as other foods that work well with licorice/fennel such as soft cheeses, lamb or seafood. Anise Hyssop can be used in place of fennel seeds lending a slightly sweeter minty taste.
