Australian Bush Tomato Soup
This isn't your average tomato soup due to 1 insanely delicious ingredient - The Bush Tomato. This fruit comes from a species of nightshade and has been used by Indigenous Australians for many many years. While Bush Tomatoes are similar to the tomato's we are used to eating .they offer up a stronger flavor closer to that of a sun dried tomato. This soup is a creamy and flavorful treat that pairs perfectly with a gourmet grilled cheese sandwich made with a sharp cheese.
Ingredients 1 TBSP Smoked Olive Oil 1 Onion, chopped 1 clove Garlic, crushed 2 TBSP ground Bush Tomato 4 slices of bacon, diced 10 Chopped Tomatoes 1 TBSP Sugar 1 Cup Chicken Stock 1 TSP Icelandic Flaky Sea Salt
1 TSP Mountain Pepper Natural Yoghurt, to serve Chopped chives, to serve
Cook the bacon to desired crispness then heat the oil in a large pan. Cook the onion and garlic until soft.
Add the bush tomato, cooked bacon, chopped tomatoes and sugar. Simmer for 30 minutes (the tomatoes will breakdown during the cooking process).
Add in the chicken stock, salt & pepper and bring to a boil.
Using a processor or blender puree the soup until the tomato skins are incorporated.
Lastly serve soup in bowl and garnish with yoghurt and chives.
